Brewing with malt extract is a quick and easy way to brew beer. In this guide, we go through the steps in extract brewing and give tips on what you should think about during brewing.

Step 1 - MASHING
Means that the malt is gently stirred into the brewery's perforated insert a little at a time so everything is mixed down without clumping in. The mashing lasts about an hour - it does no harm if it gets longer than that. The process releases the starch in the malt and turns it into fermentable sugar. Now let the brewery do its thing. The sweet wort is pumped around and heated according to the RIMS method during mashing.

Step 2 - LACQUERING '
You rinse the malt (wash) called leaching, to extract as much fermentable sugar as possible. This is done by lifting up the perforated insert with the malt (draven) in it. The now sweet wort produced during the leaching should now be heated to boiling (100 degrees) for at least 60 minutes.

Step 3 - THE BOILING
The wort is boiled and hops are added at different times (yields) according to the recipe's instructions. The cooking should last for at least an hour, during which the wort is now sterilized and the hops can convey the right amount of bitterness, taste and aroma.
Now be sure to disinfect everything that will come in contact with the wort hereafter.
After cooking, the wort should be cooled down quickly, this is done either with a spiral cooler or a plate heat exchanger (carefully follow the instructions for each cooling method). Then transfer the wort to a thoroughly cleaned fermenter and then add the brewer's yeast.

The book takes time to read but gives you a good understanding of the steps involved in beer production. You can then use this knowledge together with several good recipes in the book when you are brewing your own beer.
